We set up dinner for you buffet style to be ready to eat at the hour you specify, and be on our merry way. Choose one of the menus below:

MENU ONE (Fab Fajitas Plus)

  • Guacamole, Pico de Gallo, Tortilla Chips, Medium Salsa Verde, Salsa Xcatic (habanero) Upon Request
  • Marinated Pork Quesadillas
  • Beef or Chicken Breast Fajitas [Add $2.50 for Beef or Mixed Option]
  • Flour or Corn Tortillas (or a mix of both)
  • Brown or Black Beans [Whole, Blended, or Refried]
  • Arroz Rojo
  • Fresh Green Salad
  • Seasonal Fruit Skewers

MENU TWO (The Pescatarian)

  • Guacamole, Pico de Gallo, Tortilla Chips, Medium Salsa Verde, Salsa Xcatic (habanero) Upon Request
  • Queso Fundido w/ Soy Chorizo
  • Grilled Fish Tacos (NOT breaded, fish will vary according to season)
  • Flour or Corn Tortillas (or a mix of both)
  • Tropical Coleslaw –  Raw shredded red and white cabbage and carrots combined with a fresh sweet pineapple and cumin scented dressing. Made with coconut and canola oil instead of mayo. 
  • Red Rice
  • Brown or Black Beans [Whole, Blended, or Refried]
  • Jícama & Cucumber Salad
  • Seasonal Fruit Skewers

MENU THREE (Marco’s Mole!)

  • Guacamole, Pico de Gallo, Tortilla Chips, Medium Salsa Verde, Salsa Xcatic (habanero) Upon Request
  • Mole Poblano (Gluten Free Version Available) Served Over Poached Chicken Breast 
  • Arroz Blanco 
  • Baguette (to sop up every last drop of mole!)
  • Sauteed Seasonal Vegetables
  • Seasonal Fruit Skewers

MENU FOUR (Tortugas Ninjas)

  • Guacamole, Pico de Gallo, Tortilla Chips, Medium Salsa Verde, Salsa Xcatic (habanero) Upon Request
  • Breaded Flattened Pork Cutlet or Chicken Breast Tortas (sandwich on crusty bread roll, made with protein of your choice and refried beans, cream cheese, tomatoes,  avocado, lettuce, raw spinach, mayo, chipotle salsa)
  • Rajas Poblanas – Roasted strips of mild chiles poblanos incorporated with sautéed onions and  sweet corn into a deluge of dairy products (butter, milk, cheese)

MENU FIVE (Feeling “Snacky”)

MENU SIX (Not for Health Nuts)

  • Guacamole, Pico de Gallo, Tortilla Chips, Medium Salsa
  • Tacos Dorados de Res o Pollo –  (rolled and lightly fried in corn tortillas)
  • Rajas Poblanas – Roasted strips of mild chiles poblanos incorporated with sautéed onions and  sweet corn into a deluge of dairy products (butter, milk, cheese)
  • Red or Green Rice (tomato or cilantro base)
  • Brown or Black Beans [Whole, Blended, or Refried]
  • Chopped Green Salad
  • Seasonal Fruit Skewers

MENU SIX (Cheesy Capitán Crunch)

  • Guacamole, Pico de Gallo, Tortilla Chips, Medium Salsa Verde
  • Queso Fundido with chorizo
  • Tacos Dorados –  Shredded Chicken Breast or Shredded Beef (add $2.50 for beef option) rolled in corn tortillas and lightly fried
  • Red [made with fresh tomato] or Green [made with cilantro] Rice
  • Black or Brown Beans [Whole, Blended, or Refried]
